1 cup pitted medjool dates (about 10–12), softened*
1⁄2 tsp vanilla extract (optional)
METHOD
In a food processor, blend the dates and Raspberry Conserve until mostly smooth.
Add the almond meal, desiccated coconut, cocoa powder, and vanilla. Blend until everything sticks together. Adjust texture if needed with a little more almond meal or jam.
Scoop and roll into bite-sized balls.
Roll each ball in extra desiccated coconut.
Place in fridge for at least 30 minutes to set.
