Apricot French Toast Bites

INGREDIENTS
  • 4 tbsp Bonne Maman Apricot Conserve
  • 4 slices brioche bread
  • 2 eggs
  • ¼ cup milk
  • 1 tsp vanilla extract
  • 2 tbsp icing sugar
  • 3 tbsp butter
METHOD
  1. Trim the crusts off the brioche and cut into 1-inch squares.
  2. Assemble mini sandwiches by spreading Bonne Maman Apricot Conserve onto one square and topping it with another.
  3. Whisk eggs, milk, and vanilla in a bowl.
  4. Briefly dip each cube into the egg mixture until coated.
  5. Melt butter in a pan over medium heat.
  6. Fry the cubes until golden brown and crispy on all sides.
  7. Dust with icing sugar and serve with extra Bonne Maman Apricot Conserve for drizzling or dipping.
