Apricot French Toast Bites
INGREDIENTS
- 4 tbsp Bonne Maman Apricot Conserve
- 4 slices brioche bread
- 2 eggs
- ¼ cup milk
- 1 tsp vanilla extract
- 2 tbsp icing sugar
- 3 tbsp butter
METHOD
- Trim the crusts off the brioche and cut into 1-inch squares.
- Assemble mini sandwiches by spreading Bonne Maman Apricot Conserve onto one square and topping it with another.
- Whisk eggs, milk, and vanilla in a bowl.
- Briefly dip each cube into the egg mixture until coated.
- Melt butter in a pan over medium heat.
- Fry the cubes until golden brown and crispy on all sides.
- Dust with icing sugar and serve with extra Bonne Maman Apricot Conserve for drizzling or dipping.
